1oz Stewed Pear Syrup**
.75oz Lemon Juice
3 Dashes of Aromatic Bitters
Sparkling Mineral Water Float

SHAKE GIN, SYRUP, LEMON, AND BITTERS IN A SHAKER WITH ICE
STRAIN OVER ICE INTO A TIKI MUG OR HIGHBALL (OURS HERE IS FROM KNOTWORK IN LA)
TOP WITH SPARKLING MINERAL WATER
GARNISH WITH SOMETHING COLORFUL

** STEWED PEAR SYRUP: ADD 2 CUPS CHOPPED PEARS, 1 CUP OF RAW CANE SUGAR, AND 1/2 CUP OF WATER TO A POT. PLACE ON LOW HEAT TO SLOWLY RENDER THE FRUIT AND DISSOLVE THE SUGAR (ABOUT 1 HOUR), THEN STRAIN THE SYRUP.
